Change history that covers more than the admin panel.

Most audit extensions only log admin-panel changes, so a price changed by an ERP integration, a CLI script, or a cron job leaves no trace, and those are exactly the changes nobody can explain later. This module hooks the underlying model events, so API, CLI, cron, and admin changes are all recorded identically, with field-level diffs and one-click rollback that touches only what actually changed.
